If my OG broccoli salad has been on repeat at your house, this one’s for you. It uses the same Greek yogurt dressing, and this time the broccoli gets tossed with crisp apple, little cubes of smoked Gouda, bacon, and toasted sunflower seeds. The apple keeps it bright and sweet, while the Gouda and bacon bring a smoky, salty edge.
It’s easy to make ahead, and it works just as well next to dinner as it does packed for lunch.
Why This Works
Broccoli is sturdy enough to stand up to a creamy dressing, so it stays crunchy after a chill in the fridge and gives you a solid start on fiber. The dressing is mostly Greek yogurt, which means protein and tang in the same spoonful. Because the apple does most of the sweetening, the dressing only needs a couple teaspoons of sweetener.
Smoked Gouda and bacon add protein too. Toasted sunflower seeds finish it with crunch.
