This started with a jar of chili crisp and a chicken problem.
I wanted a marinade that had sweetness and vinegar and real savory depth, plus some heat, because chicken thighs will absolutely go boring on you if you let them. Rather than shop for it, I went through what I already had. The chili crisp turned out to be the piece that made the whole thing work.
Most jars have fried garlic, fried shallots and some form of fermented soybean in them along with the chiles. That means chili crisp carries heat, oil, and a real layer of savory flavor all at once. You end up needing less of everything else, and you skip added oil completely.
Why This Works
A good marinade covers four jobs. It needs fat so the chicken stays moist, acid to tenderize and brighten, something savory and fermented for depth, and a bit of sugar so you get browning at the edges.
Balsamic covers the acid, and it comes with its own sweetness, so it carries part of the sugar job too. Low sodium soy sauce handles the savory side without taking over the salt, which matters more than you’d think here, because your chili crisp is bringing salt as well and it stacks up quickly. Honey does the rest of the sweetening and gives you a glaze that clings to the chicken rather than sliding off it.
Chili Crisp Balsamic Chicken Thighs
Serves 4
For the marinade
4 tablespoons low sodium soy sauce
4 tablespoons balsamic vinegar
2 tablespoons honey
2 tablespoons chili crisp
1 tablespoon fresh ginger, finely grated
2 garlic cloves, finely grated
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
For the chicken
4 boneless skinless chicken thighs
Instructions
1. Whisk the honey into the soy sauce and balsamic before anything else goes in the bowl. Honey seizes up in cold liquid, so give it a good thirty seconds until it fully dissolves.
2. Whisk in the chili crisp oil, ginger, garlic and black pepper.
3. Pour off a scant 1/4 cup into a small saucepan and set it aside. This portion never touches the raw chicken, so it’s safe to use as a glaze later.
4. Put the thighs in a bag or shallow dish, pour the remaining marinade over, and turn to coat. Refrigerate at least 30 minutes, or overnight if you’re planning ahead. Thighs are forgiving that way, and a longer soak only helps them.
5. Air fryer at 380F, single layer with space between the pieces, 16 to 20 minutes, flipping halfway. That’s a lower temperature than you’d normally use for thighs, and it’s deliberate, because honey caramelizes early.
6. Brush the reserved marinade on during the last 2 to 3 minutes.
7. Rest 5 minutes.
Other cooking methods: Oven at 425F for 20 to 25 minutes. Hot skillet for 6 to 7 minutes per side. Grill over medium heat, and if you go that route, swap the grated garlic in the marinade for 1 teaspoon garlic powder, because fresh garlic burns on grates.
How to Serve It
Sliced on the bias over charred cabbage, which catches the glaze and brings real fiber
With edamame, the fastest side that still pulls weight on protein and fiber
Smashed cucumbers alongside, for cold crunch against the heat
Chopped into butter lettuce cups for a lighter dinner
Cold the next day, sliced over greens, which might honestly be my favorite way to eat it
Make It Your Own
Lower sugar: swap the honey for 3 tablespoons of allulose. You give up some of the sticky lacquer on the glaze, but the flavor holds.
No soy sauce on hand: coconut aminos work. Use closer to 6 tablespoons, since aminos are less salty and a touch sweeter, and you may want to pull the honey back slightly.
Brighter version: swap half the balsamic for rice vinegar. Less jammy, more lift, and it’s especially good if you’re serving this cold.
Chicken breast instead: it works, but keep the soak to 4 hours maximum. Breast meat goes chalky if it sits too long in this much acid, where thighs will take overnight without any complaint.
Heat level: chili crisp brands vary enormously. Some lean savory, some are genuinely hot, some are sweeter than you’d expect. Taste the marinade before the chicken goes in and adjust from there instead of trusting my measurements blindly.
For the week ahead: double the marinade and freeze the thighs right in it. They marinate as they thaw, which is one of my favorite shortcuts.
