Chicken salad has a reputation problem. Too much mayo, no real texture, kind of sad on a plate. This one is none of those things.

Tender chicken tossed in a creamy, herb-forward green goddess dressing made with Greek yogurt instead of a jar of mayonnaise. Crisp cucumber, celery, a little red onion, fresh dill and parsley throughout. Every bite has something going on, and the whole thing comes together in about 15 minutes if you have cooked chicken ready to go.

Make it Sunday and lunch is sorted for the first half of the week.


Why This Works

The issue with most creamy chicken salads isn’t the concept, it’s the execution. Heavy on mayo and light on everything else means you get a lot of fat, not much protein per bite, and a texture that feels more like a spread than a meal.

This version flips that. Greek yogurt brings creaminess without the heaviness and adds protein at the same time. Chicken gives you 30 to 35 grams of protein per serving. The vegetables add crunch and fiber that make every forkful feel more substantial. And the herb dressing, blended smooth with lemon and garlic, tastes genuinely bright and fresh rather than just “mayo with stuff in it.”

Light enough for a warm afternoon. Filling enough to actually count as lunch.
