1 cup shredded romaine
½ English cucumber, thinly sliced
1 cup cherry tomatoes, halved
¼ small red onion, thinly sliced
To Serve:
4 high-fiber whole wheat pitas or pita pockets
Extra fresh herbs for garnish
Fresh cracked pepper
Instructions
Make the ranch first so the flavors have time to come together while you prep everything else. Stir Greek yogurt, herbs, Dijon, lemon juice, lemon zest, garlic, salt, and pepper together until smooth. Taste and adjust lemon or salt as needed. It should taste bright and herby with a little sharpness from the Dijon and garlic. Refrigerate while you assemble the filling.
Warm pitas lightly in a dry skillet over medium heat for about 30 seconds per side, or wrap in a damp paper towel and microwave for 20 seconds. You want them soft and pliable, not crisp.
Spread a generous layer of ranch inside each pita. Fill with romaine, sliced chicken, cucumber, tomatoes, avocado, and red onion. Spoon a little more ranch over the filling, finish with cracked pepper and extra herbs, and serve immediately.
A note on the chicken: This is a great recipe for using up grilled or rotisserie chicken you already have in the fridge. If you’re cooking chicken specifically for this, a simple seasoning of olive oil, garlic powder, smoked paprika, salt, and pepper before grilling gives you something flavorful enough to carry the whole pita without needing much else.
