Harissa Carrot & Cottage Cheese Dip

This is the dip that disappears first at every gathering and the thing people text you about afterward asking for the recipe.

Sweet roasted carrots blended smooth with creamy cottage cheese, a spoonful of harissa for smoky heat, bright lemon, and enough garlic to make it interesting. Finished with a drizzle of olive oil, a handful of chopped pistachios, and fresh herbs. It looks beautiful on a table and tastes even better than it looks.

Keep a batch in the fridge and suddenly the whole week feels more taken care of.

Why This Works

Most dips are essentially a vehicle for whatever you’re scooping with, which is fine until you realize you’ve eaten half a bowl of something and don’t feel any more satisfied than when you started. That’s the low protein, low fiber problem that most snack dips share.

This one is built differently. Cottage cheese brings 12 to 16 grams of protein per serving and blends completely smooth so there’s no texture giveaway, just pure creaminess. Roasted carrots add natural sweetness, fiber, and a depth of flavor that raw carrots simply don’t have. Harissa adds smokiness and heat that makes the whole thing taste complex and intentional. And lemon pulls everything into focus in the way that acid always does.

Snackable, satisfying, and genuinely interesting. That’s a harder combination to find than it should be.

Macro Snapshot (Makes 4 Servings)

  • 12 to 16g protein

  • 4 to 6g fiber

  • Balanced fats

  • Lower carb
