High-Protein Banana Bread Baked Oats

If you’ve ever wanted banana bread for breakfast without actually making banana bread, this is the recipe.

One pan, about thirty minutes, and the whole kitchen smells like something good is happening. Soft, warmly spiced baked oats with real banana sweetness throughout, a slightly golden top, and enough protein and fiber to hold you well past the point where a slice of actual banana bread would have already let you down.

Make it Sunday. Eat it all week. Reheat in two minutes and it tastes fresh out of the oven every time.

Why This Works

Banana bread is one of those foods that feels comforting in a very specific way. Warm, slightly sweet, soft at the center. The problem is that traditional banana bread is mostly flour and sugar with very little to keep you full, which means it works beautifully for about twenty minutes and then leaves you looking for something else.

This version keeps everything that makes banana bread feel like a treat and builds actual structure underneath it. Rolled oats and chia seeds bring fiber. Eggs, Greek yogurt, and protein powder bring the protein. The banana itself sweetens the whole thing naturally so you barely need any added sugar at all. And the warm spices, cinnamon, a little nutmeg, a splash of vanilla, create that bakery smell and flavor that makes this feel like something you’d pay for.
