The Recipe
Makes 6 bagels
Ingredients
1½ - 2 cups almond flour (start with 1 1/2 cup and then add after mixing if more is needed)
1 cup cottage cheese, blended smooth
1 large egg, plus 1 egg beaten for egg wash
2 tsp baking powder
½ cup shredded cheddar (in the dough)
½ cup shredded cheddar (for topping)
1 jalapeño, seeded and finely diced, patted dry, plus extra slices for topping
Pinch of salt
Instructions
Preheat oven to 375°F. Line a baking sheet with parchment paper.
Blend cottage cheese until completely smooth. Set aside.
In a large bowl, combine almond flour, salt, and ½ cup shredded cheddar. Mix well.
Add blended cottage cheese and egg. Stir until a dough forms.
Fold in the diced jalapeño.
Stir in baking powder by hand until just combined. Do not overmix.
Divide dough into 6 equal portions. Lightly wet hands and shape each into a ball, then press a thumb through the center and gently stretch to form a bagel shape.
Place on prepared baking sheet. Brush each bagel with egg wash.
Top with remaining shredded cheddar and a few jalapeño slices.
Bake at 375°F for 25 to 30 minutes until golden brown on top and firm on the bottom.
Cool on the pan for at least 10 minutes before cutting. They firm up as they cool.
