Over the last few weeks, I’ve made this honey chipotle chicken at least half a dozen times—and that’s not counting the full roasted chicken I made with the same marinade. Let’s just say my sons are obsessed… and I don’t blame them. This recipe is a dead-on dupe of Chipotle’s Honey Chipotle Chicken—and dare I say… even better.

The Magic Marinade
Let’s talk about the real secret here: the marinade. It’s smoky, garlicky, slightly sweet, with the perfect kick. And it takes all of two minutes in the blender.
Here’s what you’ll need:
1.5–2 lb boneless, skinless chicken thighs (breasts work too, but thighs = juicier)
1 can (7 oz) chipotle peppers in adobo (use the sauce too!)
¼ cup avocado oil or olive oil
1–3 cloves garlic
2 tbsp honey
2 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
Optional: 2 tbsp apple cider vinegar for a subtle tang
To Make It:
Add everything to a blender and blend until smooth.
Reserve about ¼ of the marinade for basting.
Pour the rest over your chicken in a resealable bag or bowl. Massage to coat.
Marinate for at least 2 hours (overnight is even better).
Cooking Options

Air Fryer (My fave for weeknights): 375°F for 22 minutes
Grill: About 5–6 minutes per side
