So of course, I had to recreate it — but with a few tweaks to make it simpler, slightly higher in protein (maybe), and totally doable for a weeknight dinner… especially if you have an air fryer (I used my Ninja Crispi, which I use constantly when I want that juicy-crispy combo without turning on the broiler).
