Key Lime Pie Cheesecake Cup (No Bake, No Microwave)
No bake. No microwave. Almost 20g protein. Less than 10 minutes.
I’ve been hearing from so many of us lately asking for no bake versions of my single serve desserts. And honestly, I get it. Sometimes we just want something fast, no heat involved, that still hits like a real dessert.
This one delivers.
It tastes like key lime pie. Creamy, tangy, sweet, with that graham cracker crunch on top. Two minutes. One cup. Almost 20 grams of protein.
Why This Works
Cottage cheese is doing all the heavy lifting here. It blends into this impossibly creamy, smooth base that honestly tastes more like cheesecake filling than anything “healthy.” The lime zest and juice cut through the richness perfectly, and the crushed graham crackers on top give it that pie texture without ever turning on an oven.

Key Lime Pie Cheesecake Cup
What We Need:
3/4 cup low fat cottage cheese
Zest of 1 lime
1.5 tbsp lime juice (about 1 lime)
1/2 tsp vanilla extract
Pinch of salt
Natural sweetener to taste
2 graham cracker sheets
How We Make It:
Add cottage cheese, lime zest, lime juice, vanilla, salt, and sweetener to a blender or small food processor.
Blend until completely smooth.
Pour into a cup or small bowl.
Crush graham crackers and scatter over the top.
Finish with a little extra lime zest.
Thrive Tip
Cottage cheese is one of the most underrated protein sources out there. At roughly 24-28g of protein per cup depending on the brand, it gives us a massive protein head start in recipes where we’d normally get close to zero. When we blend it smooth, the texture completely transforms. Nobody would guess what’s in this.
How to Serve It
Straight out of the cup, immediately
Chilled in the fridge for 30 minutes for a firmer, more set cheesecake texture
Topped with some more lime zest for even more brightness.
Make It Your Own
Swap lime for lemon to make a classic lemon cheesecake version
Add a tablespoon of coconut cream for a tropical twist
Use chocolate graham crackers for a key lime x chocolate combo
Stir in a half scoop of vanilla protein powder for an extra protein bump (blend it in with the base)
This is the kind of recipe that becomes part of the rotation. Two minutes, one cup, real dessert energy, and protein that actually counts. We eat dessert every night around here. This is how.
