This is the chicken I’ve been meal prepping on repeat for years. It has a nice neutral base that works with pretty much anything, which is exactly what I want from a batch of protein I’m going to eat all week. Some weeks it goes on salads and into wraps, and other weeks it ends up in taco bowls with black beans and salsa.
If you’ve ever made a big batch of chicken and been tired of it by Wednesday, the marinade makes the difference here. Greek yogurt, lemon, fresh garlic and oregano keep it juicy and give it enough flavor to be interesting. It doesn’t push the chicken so far in one direction that it only works for one kind of meal.
Why This Works
The yogurt tenderizes the chicken while it marinates and helps it brown in the air fryer or oven. I use both the lemon zest and the juice, because the zest is what keeps the flavor bright on day four. Thighs are the better choice here. They’re much more forgiving than breasts, so they stay juicy even after you reheat them.
Lemon Garlic Chicken
For the marinade
½ cup plain Greek yogurt
1 tbsp olive oil
Zest and juice of 1 lemon
4 garlic cloves, grated or minced
1½ tsp dried oregano
1 tsp kosher salt
½ tsp black pepper
Pinch of red pepper flakes (optional)
For the chicken
2 lbs boneless, skinless chicken thighs
To finish
2 tbsp chopped fresh parsley
Extra squeeze of lemon
Instructions
Stir all the marinade ingredients together in a large bowl.
Add the chicken and toss until every piece is coated. Cover and refrigerate for at least 30 minutes, or overnight. Don’t go past 24 hours, or the lemon starts to make the texture soft.
Wipe off the extra marinade. This step is easy to skip, but it’s the difference between golden chicken and pale, steamed chicken.
Air fryer: Cook at 380°F for 18 to 22 minutes, flipping halfway through.
Oven: Bake at 425°F on a lined sheet pan for 20 to 25 minutes, flipping halfway through. A wire rack on the pan helps it brown on both sides. For extra color, broil for 1 to 2 minutes at the end and keep an eye on it.Cook until the chicken reaches 175°F inside. Let it rest for 5 minutes, then slice or shred.
Finish with parsley and another squeeze of lemon. Store in the fridge for up to 4 days.

Link your prep to something you already do every week, like putting away groceries. The marinade takes a few minutes to stir together, and once the chicken is cooked, the protein part of your week is done. Then each meal during the week only needs one fiber addition, like a scoop of chickpeas, a big handful of greens, or a high-fiber wrap, and you’re building toward your 8 to 10 grams without having to think about it.

Make It Your Own
Use fresh dill instead of parsley for a more Mediterranean flavor
Use lime instead of lemon, and swap the oregano for cumin and smoked paprika, for taco and burrito bowls
Use avocado oil if that’s what you usually cook with
Double the red pepper flakes if you like some heat
