This one has been in my fridge every single week for the past month and I don’t see that changing anytime soon.
Mango, coconut, lime, and chia seeds. It sounds simple because it is, and somehow the combination is better than it has any right to be. Creamy, tropical, slightly tart from the lime, and that fresh mango on top makes it feel like something you’d order at a beachside café rather than something you made on a Sunday afternoon in about five minutes of actual effort.
I’ve been making three or four of these at a time and keeping them in the fridge so breakfast is already handled before the week even starts. Thirty minutes to set, grab it on your way out the door, done.

What You Need
1 container coconut Greek yogurt (plain works too, but coconut takes it somewhere)
Juice of ½ lime, plus zest for the top
Chia seeds
Fresh mango, diced
Unsweetened coconut flakes
How to Make It
Mix the coconut Greek yogurt, lime juice, and chia seeds together until combined. Spoon half the mixture into a jar, add a layer of fresh mango and a sprinkle of coconut flakes, then top with the remaining chia mixture. Finish with more mango and coconut on top.
Refrigerate for at least 30 minutes until the chia seeds have expanded and the whole thing has set into something creamy and layered. Right before eating, add a little lime zest over the top. That last step is small but it makes everything taste brighter.
Why This Works
Chia seeds are one of the easiest ways to add fiber to something that already tastes like dessert. They expand as they sit and create that thick, pudding-like texture without any cooking or complicated steps. Greek yogurt brings protein. Mango brings natural sweetness and a little vitamin C. Coconut flakes add a satisfying chew.
It qualifies as breakfast, it qualifies as dessert, and nobody needs to know which one you’re calling it.
Meal Prep the Right Way
Make three or four jars on Sunday. Stack them in the fridge. Pull one out each morning. That’s it. They keep well for four to five days and actually get creamier as they sit, which is a rare quality in a meal prep breakfast.
