I come across people all the time for whom the idea of eating salad every day sounds like a punishment. Clearly, they don’t know the magic of actually good salads. Salads with flavor, with texture, with protein and fiber that keep you full, and dare I say… get better the next day? This is one of those salads.

This Mediterranean Chicken and Lentil Salad was (and still is) one of my ride-or-die meals during my weight loss journey. It’s fresh, satisfying, protein-packed, and perfect for meal prep. And yes—it’s part of how I lost over 80 pounds without ever feeling deprived.

It’s also one of those “everything in your fridge” salads that’s endlessly customizable, but the core combo? Perfection.


🥗 Why This Salad Works

  • Protein + fiber = full and satisfied.

  • Every bite is a flavor bomb. Think crunchy cucumbers, salty olives, juicy tomatoes, and that creamy jalapeño feta if you're fancy.

  • It’s low-effort. You can use pre-cooked chicken and Trader Joe’s steamed lentils.

  • It holds up for meal prep. No sad wilted lettuce here.
