This is the recipe that makes your kitchen smell like somewhere you’d want to be on a cold evening.

Tender chicken thighs braised in a warm, fragrant sauce with cumin, coriander, cinnamon, ginger, and turmeric. Sweet bites of apricot that soften into the broth and make everything taste a little more interesting. Fiber-rich chickpeas that soak up all of that flavor. Fresh mint and parsley over the top, a squeeze of lemon, toasted almonds for crunch.

It tastes like something from a cozy little restaurant that takes its spice blends seriously. And it comes together in one pan in about 40 minutes.
