My Go-To Sugar-Free Caramel Sauce
My luscious caramel sauce that I've been making for decades.
There are certain recipes I make so often that I forget they’re not common knowledge.
This luscious caramel sauce is one of them.
After I shared my fit-for-one apple crisp earlier this week, my DMs and comments were full of the same question: “Wait… what is that caramel sauce?”
So here it is — my sugar-free caramel sauce. Creamy, silky, and honestly way easier than it looks.

Why This Works (Even Without Sugar)
The secret is allulose.
It’s the closest thing to real sugar I’ve found — no weird aftertaste, no cooling effect, and most importantly: it actually caramelizes. That means you get real depth of flavor, not just sweetness.
This isn’t a shortcut recipe. It’s real caramel… just made smarter.
My Sugar-Free Caramel Sauce
Ingredients
1⅓ cups allulose
1/2 cup water
2 tbsp unsalted butter, softened and cut into cubes
½ cup heavy cream
1 tsp pure vanilla extract
1 tsp sea salt, or to taste
How I Make It
Add the allulose to a heavy-bottomed saucepan and gently shake the pan to distribute it evenly. Drizzle the water over the top and let it sit for about a minute to fully moisten the sweetener.
Set the pan over medium-low heat and do not stir. This part matters. Let the sweetener melt completely until the mixture turns clear — this usually takes about 5 minutes.
Once it starts to simmer, increase the heat slightly. As it cooks, gently swirl the pan occasionally. You’re looking for a honey-colored caramel.
Lower the heat to medium-low and carefully whisk in the butter. It will bubble up — trust the process and keep whisking until smooth.
Slowly stream in the cream while whisking constantly. Again, lots of bubbling and steam. Totally fine.
Remove from heat and stir in the vanilla and top with salt.
How I Use It
Stirred into your coffee.
On my fit-for-one apple crisp
Drizzled over Greek yogurt or ice cream
Swirled into chia pudding or oatmeal
Over roasted apples or pears
Straight off the spoon (no judgment)
A little goes a long way.
A Quick Note on Storage
Store in an airtight container in the fridge for up to 2 weeks.
It will firm up when chilled — just warm it gently on the stovetop or in the microwave before using.
