Tahini Peach Protein Overnight Oats

Creamy oats with nutty tahini layered throughout, sweet peaches on top, a little crunch from pistachios, and that optional pinch of flaky salt over everything that sounds strange until you try it and then becomes non-negotiable. It tastes like something from a good café, costs almost nothing to make, and takes about four minutes the night before.

Why This Works

Standard overnight oats have a texture and sweetness problem. Too much liquid and they go mushy. Too much fruit and sweetener and the blood sugar spike arrives right on schedule. Not enough protein and they’re essentially a pretty bowl of carbs that leaves you hungry by 9am.

This version is built differently. Greek yogurt and protein powder bring 25 to 30 grams of protein. Oats and chia seeds together bring 8 to 10 grams of fiber that absorbs liquid overnight and creates a thick, creamy texture rather than a watery one. Tahini adds healthy fat and that distinctive nutty richness that makes these taste more complex and satisfying than any overnight oat made with nut butter alone. And the peaches keep everything bright and fresh so it doesn’t feel heavy despite being genuinely filling.

Prep it Sunday night and breakfast is handled for the week. Each jar gets better as it sits.
