Hi friends!
When the weather turns cool, I want a bowl of soup that feels comforting and still counts as a full meal. This roasted fall veggie soup gives me both. The veggies roast until the edges caramelize, then everything gets blended with bone broth and white beans until it's thick and creamy.

High Protein, High Fiber Roasted Fall Veggie Soup
Butternut squash, cauliflower, carrots, red pepper, onion and garlic all roast together on two sheet pans until the edges caramelize. Then everything gets blended with chicken bone broth and white be…
It makes four meal-size bowls, and it freezes beautifully, so you can stash a couple for the busy weeks coming up. Paid members, your two bonus recipes and this week's meal prep guide are waiting at the bottom!

Why beans belong in your soup
A veggie soup can be delicious and still leave you hungry an hour later. The white beans and bone broth are what make this one filling enough for dinner. The beans bring fiber and protein in one ingredient, and the broth adds more protein without making the soup heavy.
Protein and fiber together slow digestion, which may help keep your blood sugar steadier and keep you full longer. My starting point for every meal is 25 to 40 grams of protein and 8 to 10 grams of fiber. Blending the beans right into the soup is one of my favorite ways to get there without anyone noticing!

High-Protein, Low Carb Lasagna Soup
Lasagna soup gives you the flavor of a pan of lasagna with none of the layering. My version keeps the cheesy, tomato-y bowl you want and builds it around protein and fiber. Lean ground meat, beef bon…

BONUS RECIPES
Autumn Crunch Broccoli Salad
If my OG broccoli salad has been on repeat at your house, this one’s for you. It uses the same Greek yogurt dressing, and this time the broccoli gets tossed with crisp apple, little cubes of smoked Gouda, bacon, and toasted sunflower seeds. The apple keeps it bright and sweet, while the Gouda and bacon bring a smoky, salty edge.
Coconut Curry Chicken Thighs
Most marinades get poured down the drain, and that has always bothered me. You build something good, it does its work on the chicken, and then it goes in the trash because it touched raw meat and you can’t do anything with it.
NOVEMBER MEAL PLAN
November Meal Prep Plan: The Harvest Table
November might be my favorite month to cook. The whole menu leans into the flavors I look forward to all year: sage, cranberry, maple, roast turkey, sweet potatoes. I also mixed in a few dishes from my everyday rotation that go a completely different direction, like miso glazed salmon, Korean beef bulgogi bowls and a Thai peanut chicken bowl, so you’re not eating the same flavors four weeks in a row.
Not a paid member yet? Every week you'd get at least two extra recipes and the full monthly meal prep guide, plus access to my entire recipe library. It's $6 a month or $55 a year.
